The idea was born out of a simple question…

Founded by Erin Bell, a passionate innovator with over five years of experience in the drinks industry, Draff and Barrel was born from a simple yet profound question: what happens to the grains left behind after the distillation of whiskey and beer? And can she make something beautiful out of it?

One evening, while drinking a glass of her favourite amber liquid over ice, she discovered that no one was really creating anything from the spent grains and that was really exciting.

Over the course of the year, she figured out how to carefully wash and repurpose the spent grains- filling her kitchen with the malted aroma of toasted barley. She then went on to develop a recipe to preserve coasters which show off the natural beauty of each grain. After many attempts- she finally had something beautiful that she could share with the world and especially fellow whiskey lovers. What she loved was that not only is a coaster sustainable, but it’s something useful to pair with whiskey. Her work is a conversational starter and she hopes that it adds a level of depth and connection to anyone who loves Irish whiskey.
